Yummy, HEALTHY Salmon Recipe

I love fish! I could literally eat it every day! Chase on the other hand doesn't love fish quite like I do! Although he will eat it and usually like it, sometimes he has to much of a "mans" appetite for my cooking! He was raised in a family of all boys and I believe his mom really catered to how boys like to eat; meaty, saucy, buttery, and cheesy! 
Now, none of those things are bad and they are all delicious, but mixed all together in one dish, every night of the week would personally make me blow up like a ballon. Chase on the other hand has an endless stomach and an amazing metabolism and can eat whatever he wants! (isnt this the case for all women? So unfair)
So as his wife, my life long goal is to find health conscious recipe's that work for both of us! Especially with fish! This recipe, Salmon Florentine is so yummy! Its a good balance of cheesy and saucy without making you feel heavy and full afterwords. And its so full of flavor! This recipe is definitely a keeper! Chase and I both really enjoyed it! 

Salmon Florentine



INGREDIENTS

  • 20 oz fresh spinach
  • 1 tablespoon olive oil
  • 1/4 cup minced shallots
  • 2 teaspoons minced garlic
  • 7 sun-dried tomatoes, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup part-skim ricotta
  • 2 skinless salmon fillets (6 oz each), rinsed and patted dry

Heat oven to 350°. Rinse spinach clean. Set aside. Heat oil in a large skillet over medium heat. Add shallots; cook, stirring, until soft, about 3 minutes. Add garlic; cook 1 minute more. Add spinach, tomatoes, salt, pepper flakes and pepper; cook, stirring, 2 minutes more. Or until spinach wilts. Turn heat to low add ricotta; quickly stir to combine and remove from heat. Continue to stir until completely combined. Season with salt and pepper. Pack about 1/2 cup spinach mixture on top of each fillet, matching the shape of the fillet. Place fillets on a rimmed baking sheet or in a glass baking dish; bake until cooked through, 15-25 minutes.
