Recipe


Coconut Lime Chicken

Ohhhh my gooodness! This meal is the best thing I have had in a long while! If you are even a little bit of a curry fan then this meal will blow your mind! I found it to be a little slice of curry heaven! I followed the recipe courteous of Menu Musings blog exactly and it turned out so good! 

Ingredients:
  • 1 package of skinless, boneless chicken breasts
  • 3 Tbsp canola oil
  • zest of 1 large lime
  • 1 tsp cumin
  • 2 Tbsp soy sauce
  • 1 - 1 1/2 tsp kosher salt
  • 3 Tbsp sugar
  • 2 tsp curry powder
  • 3/4 cup canned coconut milk
  • juice of 1 lime
  • optional - 1 serrano pepper, finely minced or cut into thin slivers
  • 1/4 cup chopped fresh cilantro
Step-by-step:
Cut slits in chicken breast to help with marinating.  Place them in a ziplock bag and flatten them uniformly with a meat pounder or what ever you have laying around.  
In a bowl, add all of the marinade ingredients together. {oil, lime zest, cumin, soy sauce, salt, sugar, curry powder, coconut milk, lime juice, and Serrano pepper if you are using one} {I added a little bit of cayenne pepper, only thing I changed} Pour the marinade over the chicken in the zip top bag, squeeze the air out and allow to marinade at least 30 minutes, or preferably up to 2 hours in the fridge. 
After marinating, grill the chicken over moderately high heat in a pan with a bit of cooking spray or canola oil in it.  Get the pan really hot before you add the meat.  You want it to sear.  Allow to sit without moving it for several minutes on each side until just cooked.  The time will depend on the thickness of the meat.  While cooking the meat,  add the marinade to a small saucepan and bring to a full boil for at least 2-3 minutes.  This is sufficient to kill all of the bacteria in it.  Or you could double the marinade, divide in two, and just toss the part that you used for the chicken. Serve the chicken and a drizzle of the sauce over rice with chopped cilantro and fresh lime wedges. DELICIOUSSS!!

On my Radar.

Master Bedroom.... 


I am currently decoration our master bedroom. I haven't "redone" my own bedroom since I was in high school, so it's been really fun! I have found it hard to find items I like, with a price tag I like, at the store's we have located in Salt Lake. So I have been ordered some furniture online. It is totally scary and I just hope the item looks as nice in person as it does on the screen! I just make sure to read every. single. detail. on whether the item is returnable, how to do the return, and if I will have to pay shipping back! No one want to lose sixty buck on shipping!  
So far I have ordered two of the Rhoe night stand from One Kings Lane, and I like them a lot! One showed up broken, which although that was totally annoying, One Kings Lane was very helpful and made it extremely easy to get a new one! They weren't to expensive, which kind of shows, but it's still a good piece! Recently I ordered the Stella velvet bench from Over Stock, and i'm still waiting for it to show up! Im excited and nervous! I really hope I love it! 
Once i'm done putting our room together I'll post a picture with some details on my experience with online furniture shopping! Stay tuned!

Mint 4oo

VEGASSSS Weekend!!!!! When you get married, you gain new hobbies. Trucks and motor's is one that I gained! This last weekend we went to Vegas to visit some friends and  to attend the Mint 400. If you have never heard of it, look it up! It was pretty dang awesome! Don't worry, I made Chase take me shopping for at least a few hours while we were in Vegas!

Obsession.

I am completely on board with the braid trends! I love how braids add so much texture and dimension with all the different color's in the hair! I'm seriously obsessed! I have never enjoyed up-styling but with braids beings such a trend, up-styling has become much more fun! Even with having short hair, braided up-do's are possible. You may just have to get a lot more creative!
