Skinny Banana Cookies + Coconut Crack Bars


The key to staying away from sugar is to have treats laying around the kitchen that taste like sugar, but aren't. You see what I did there! HA! Yesterday I made Coconut Crack Bars and Skinny Banana Cookies to have in the house for when I get a sweet tooth! Both are delicious and easy! So easy!

Skinny Banana Cookies
  • 4 ripe bananas, mashed 
  • 2cups of uncooked Old Fashion Oats 
  • 1/2cup of Chocolate Chips 
Preheat the oven to 350 degree's. Spray cookie sheet with nonstick cooking spray. Mix the mashed bananas and oats in a bowl. Fold in the chocolate chips. Using a spoon, scoop up the batter and place on the cookie sheet. Bake 12-15 minutes or until golden brown.

Coconut Crack Bars 
  • 1cup shredded coconut (unsweetened) 
  • 1/4 cup agave 
  • 2 tbsp virgin coconut oil 
  • 1/3 tsp pure vanilla extract 
  • 1/8 tsp salt 
Combine all ingredients in a food processor. Press into any small pan or container and refrigerate for an hour. (or freeze for 15 min) Keep refrigerated.
